Cinnamon Overnight Oats

I haven’t shared a breakfast recipe in a while, mainly because my breakfasts are pretty boring: cereal and fruit or yogurt. But recently I’ve been switching up with overnight oats.


“Hot oatmeal in the summer?!” you ask. No, no, no, these oats are cool, creamy, filling, and super healthy. And the best part is, no cooking involved. Just stir together the night before, store in the fridge, and you’ve got a delicious breakfast ready to go the next morning.


There’s no exact science to this recipe, so feel free to improvise with your oats-yogurt-milk ratio. I happen to like mine a little thicker and creamier, so I use Greek yogurt and only 1/2 cup almond milk, but you can play around with this if you like yours a little milkier.


Overnight oats also make a great vehicle for tasty toppings, like fruit, nuts, honey, brown sugar, granola, dried fruit – get creative!


The oats are slower to digest than regular cereal, so they’ll keep you satiated until lunch time, and are totally bloat-free, which is key for summertime. Now that sounds like a well-rounded breakfast that even Tony the Tiger would be jealous of. It’s grrrreat!


Cinnamon Overnight Oats

serves 1


1/2 cup old fashioned oats

1/2 cup plain nonfat Greek yogurt

1/2 cup unsweetened vanilla almond milk

1/2 tsp stevia extract

heaping 1/4 tsp ground cinnamon

1. Stir all ingredients together in a small bowl or tupperware container until combined. Cover and refrigerate overnight. Top with your favorite fruit, granola, etc!
