Cooking Demo: Taco Salad

Today I’m putting my high school theatrical skills to the test with my first cooking demo video! In this demo, I share my recipe for taco salad – a healthier riff on the fatty taco salad bowls I used to devour in the NYU dining hall. Taco Salad

makes 4-6 servings

Ingredients:

1 yellow onion, chopped

1 tbsp olive oil

1 lb lean ground beef

2 tbsp chili powder

1 tsp garlic powder

1/2 tsp cumin

1/2 tsp dried oregano

1/2 tsp salt

3/4 cup chicken broth

2 roma tomatoes, diced

1-2 avocados, diced, tossed with lime juice

1 can black olives, diced

1/3 fresh cilantro, chopped

jar of salsa

3 romaine hearts, chopped

1. Heat  olive oil in a large skillet over medium-high heat. Add beef and onion to pan. Cook until browned, about 10 minutes.

2. Add spices and broth to the pan, cover and continue cooking about 5 minutes more.

3. Assemble salads by layering lettuce with beef mixture, tomato, avocado, olives, cilantro, salsa, and whatever toppings you like.
